Kajraari Bhindi

This Recipe is to make Ladiesfinger(Bhindi) Dish

Ingredients:

2 tbsp Cooking Oil
250gm Ladiesfinger(Bhindi) - cut into small pieces
10 Garlic Cloves(Peeled & Finely Chopped)
1 Pinch Asafoetida
1/2 tbsp Turmeric Powder
1 tbsp Red Chili Powder
2 tbsp Coriander Powder
Salt to taste

Recipe:

Heat oil in Frying Pan.

1.) Add chopped Garlic & Asafoetida(Heeng), fry for sometime until Garlic turns dark brown.
2.) Add Turmeric Powder & then Ladiesfinger(Bhindi) & stir well for 8 Minutes.
3.) Add Red Chili Powder & Coriander Powder & salt as per taste(1/2 tbsp generally)

Cook for 5 Minutes & Serve Hot with Chapati.

How To Make Indori Poha

Ingredients:

2tbsp Cooking Oil
250gm Poha
5-6 Green Chilies
2 Pinch Turmeric Powder
2 tbsp Sauf (Fennel Seeds)
1 tbsp Sugar
1 Onion, Finely Chopped
1 Potato, Medium Finely Chopped
Coriander Leaves
Salt to taste

Recipe :

Take all Poha in a sieve(Chalni) & run water over it for 1 minute, leave the Poha as it is.

Heat oil in frying pan(Kadai) add the items in following order: Low Flame

1.) Sauf (Fennel Seeds)
2.) Green Chilies [2 seconds after adding Fennel seeds]
3.) Onion [30 seconds after adding Green Chili]
4.) Potato+Salt(1/2 tbsp) [30 seconds after adding Onion]

Stir the mixture well & cover it for 8 minutes.

In the meantime add Sugar to the Poha in Sieve & Mix well.

Now add Poha to Frying Pan & Mix well On Low Flame, wait for 2 Minutes, add Coriander Leaves.

Your Indori Poha is ready to be served. Serve with Ratlami Sev/Indori Baarik Sev.

How To Cook DAL-BAATI Special Dal

250g Tuwar+100gmChana dal+1tbsp salt (Boiled in 550g water)
Boil in pressure cooker up to 3 whistles & don't open until overall pressure is released.

Step 1:

4 tbsp ghee or groundnut oil
1/2 tbsp cumin seeds1/2 tsp mustard seeds
2 Pinch Asafoetida
6 small green chilies, finely chopped
1/2 tbsp turmeric 
1 Onion, finely chopped
5 Garlic Cloves
Ginger - 1 tbsp finely chopped/crushed 
1 tbsp Khada Garam Masala (use )

Mix everything in Step 1 in a small bowl

Step2:

1 tbsp Coriander Powder
1 tbsp Red chili powder 
1 tbsp Garam Masala powder
2 Red Tomato, finely chopped

Mix everything in Step 2 in another small bowl

Step 3:

Fresh coriander, finely chopped to serve(More the merrier)


Recipe :

HEAT Oil/Ghee in Pan/Kadai

Add  Mixture from step 1, stir
wait 4 minutes

Add mixture in step 2, stir
wait 1 minute

Add boiled DAL to the Pan, Mixing it with the Masala we just made.
Add 2-3 cup water to this if you want more liquidity.

After Mixing well, now add ingredients in step 3
wait for 5-8 minutes, shut off the gas.

Your Dal Baati's Special Dal is ready to serve.

How To Cook Basic Tuwar Dal(Less Spicy)



250g Tuwar dal (Boiled in 400g water)
Boil in pressure cooker up to 3 whistles & don't open until overall pressure is released.

Step 1:

2 tbsp ghee or groundnut oil
1/2 tbsp cumin seeds1/2 tsp mustard seeds
2 Pinch Asafoetida
4 small green chilies, finely chopped
1/2 tbsp turmeric 

Mix everything in Step 1 in a small bowl

Step2:

1/2 tbsp Coriander Powder
2 Pinch Red chili powder 
1 Pinch Garam Masala

Mix everything in Step 2 in another small bowl

Step 3:

1 Red Tomato, finely chopped
Fresh coriander, finely chopped to serve(More the merrier)


Recipe :
